Even though the summer heat is still upon us, I've been craving a simple tomato soup. It's the perfect way to take advantage of the summer crop.
There's something about adding grains to a salad that ups the satiety and comfort factor for me. The kale in our garden is really thriving this summer so I decided a summer chicken, kale, and quinoa salad was in order.
A whole bunch of veggies and chicken breast tossed with a super flavorful Asian-inspired sauce makes for one delicious (and easy!) sheet pan meal prep recipe.
